The Dancing Men immediately springs to mind - he packs his pipe with his left hand and then goes on to write on the blackboards with his right. Also in Silver Blaze at the end he picks up the cataract knife with his left hand and then transfers it to his right to make an incision in the apple. He also strikes a match with his left. There are lots more throughout - just shows how many times I've watched this series... :)
